These timings assume large hen eggs. Treat them as a starting range and use the texture cues above.

What heat is doing

White and yolk do not set at exactly the same pace.

Proteins unfold

Heat disturbs tightly folded proteins, allowing them to connect with one another.

A network forms

The clear white becomes opaque and liquid turns into a soft gel.

Moisture is squeezed out

Too much heat tightens the network, producing dry, rubbery eggs and sometimes visible water.

Troubleshooting

What went wrong?

Most egg problems come back to excessive heat, excess time or too much added moisture.

Rubbery whites

Why: Heat was too high or cooking continued too long.

Next time: Lower the heat and stop earlier; residual heat keeps working.

Grey-green ring

Why: A firm-boiled egg was overcooked or cooled slowly.

Next time: Transfer it straight to cold water once cooked.

Watery scramble

Why: The eggs were cooked too hot, or wet additions released liquid.

Next time: Use gentler heat and cook watery vegetables separately.

Poached egg spreads

Why: The egg is older or the water is boiling too strongly.

Next time: Use a fresher egg and keep the water at a bare simmer.

Omelette tears

Why: The centre is too wet, too full or stuck to the pan.

Next time: Use a suitable pan, loosen the edge and reduce the filling.

Shell will not peel

Why: Very fresh eggs often cling more tightly after boiling.

Next time: Chill thoroughly and peel under running water; slightly older eggs usually peel more easily.

International safety note

Texture preference and safety guidance are separate questions.

Official advice varies. US guidance lists 71°C / 160°F for egg dishes such as quiche and casseroles; Canadian guidance lists 74°C / 165°F for egg dishes.

UK guidance allows raw or lightly cooked hen eggs for most people, including many vulnerable groups, when they carry the British Lion mark or come from an equivalent recognised assurance scheme. Other eggs should be cooked thoroughly, and people with severely weakened immune systems should seek appropriate medical advice.
